Baking with help.....
Mar. 27th, 2015 11:07 amWork was a lot of work and seriously...being sloppy needs to be punished with impunity when it makes it so I can't ship hardware out the door cause you erased something that you shouldn't have off the hardware. Sighs.
Got home after a quick trip to the store cause I was reminded that St. Felix is once again doing auction baskets and I used to make cheesecakes for them and well...yeah. So I had to dig out the recipe....and its Becca's Black Forest Cheese Cake. I made a small change and put in a half sleeve of thin mints for the crust and I omitted the cheeries/chocolate sauce. It will be decadent enough. I also made Benton's cupcakes for his Bday using this recipe: Bakery Quality White Cake. Last time I made it I did not sift/fluff the flour and that was a big mistake. I did that this time using the food processor and it was way better. I also fixed the Kitchenaid to have it sit taller in the bowl and it stopped the awful grinding...I'm sure its been tweaked by Mel and the bread making.
I had the lovely help of Willa and Ashley. They helped keep me company, chat and make the gift bags for the kiddos for the party. I still need to frost the cupcakes but I will do that tomorrow AM when I'm awake. It was 945pm by the time I got the cheesecakes in the oven and well, I was pooped. I knew that the buttercream recipe on the cake page was not right. So I'm using the one from Bakingdom Perfect Vanilla Buttercream.
I also, again, didn't eat dinner and ended up having beer and cupcakes. Sighs. We had to taste test and well....I'm weak. I've still got the remnants of the migraine and sugar just sounded good. The cake came out really good compared to last time where it was too dense. Its gonna stick to the cupcake liners a bit but meh.
So afterwork and hopefully after a quick hard workout I'm going to check out a used van. I feel like a soccer mom looking at minivans but for us the practicality of it out weighs the stigma. Its a 2014 Dodge Caravan with low mileage and I just need to see if it has the options I wanted. I'll be sad to get rid of the Xterra but I've had her almost 14 years...
