Cous Cous Salad - Pantry Kung Fu
Aug. 19th, 2009 12:38 pmThis is a great quick and super easy recipe I've kinda developed over the years...its pretty free form but here ya go:
Cous Cous Salad
Make 2 cups of cous cous per package directions, add pepper and garlic to the boiling water.
Drain one can of garbonzo beans
Drain one small can of diced jalapenos
Drain one can of diced tomatoes
Toss cous cous with a fork and add in the canned stuff. Season with lots of pepper. Mix to combine. Stir in 1/4 of Nellie and Joe's Key Lime juice.
This salad is great hot or cold. Goes great with Chicken, turkey, pork chops, steak etc.
Other add ins can include:
Feta cheese
Olives
Kidney beans
Cilantro
diced carrots

Date: 2009-08-19 11:18 pm (UTC)I do a cous-cous salad thingie that involves pretty much the same prep for the cous-cous (garlic, pepper), then letting it cool and adding feta, garbanzo beans, diced tomatoes, and basil. Been using various kinds of white beans since getting home, since Mom has an irrational bias against garbanzo beans.
